To begin making Dale's Mesquite Grilled Amberjack first , mix together melted butter, dale’s Seasoning, orange juice and pineapple slices.
Then, baste amberjack with mixture and place on grill.
Next, continue to cook 4-6 minutes on each side until flaky.
Then, place pineapple on grill, and cook 1 minute.
Finally, serve topped with diced tomatoes and cilantro.
