Grilled Chopped Smoky Chicken Salad with Charred Tomato Vinaigrette

Ingredients
- 1 ½ lbs. chicken tenderloins, about 12 tenders
- 4 Tbsp. olive oil, divided
- 1 ½ Tbsp. Dale’s Smokehouse BBQ Blend, divided
- 2 ears fresh corn, about 1 lb whole cobbs, shucked and cleaned
- 1 small (8 oz.) red onion, cut into 1/4” slabs crosswise
- 2 medium (3 oz.) roma tomatoes, halved
- 3 Tbsp red wine or Sherry vinegar
- ¼ cup vegetable oil
- 1 Tbsp honey
- 1 tsp. kosher salt
- 2-3 heads Little Gem lettuce (10 oz.) or 1 Romaine lettuce heart, washed/chopped
- 2 medium (8 oz. Total) Persian cucumbers, sliced
- 1 cup multicolor cherry tomatoes, halved
- ½ cup crumbled Feta cheese
Directions
- Preheat grill to 450°F.
- Place chicken, 1 tablespoon olive oil, and 1 tablespoon Dale’s Smokehouse BBQ blend in a medium bowl; toss to coat chicken evenly in oil mixture. Set aside.
- Place prepared corn, onions, and tomatoes on a baking sheet; drizzle evenly with remaining olive oil.
- Combine vinegar, vegetable oil, honey, kosher salt and 1/2 teaspoon pepper in a blender; set aside for later use.
- Place vegetables in a single layer on lightly greased grates of preheated grill; cover grill and cook 5 minutes. Open grill; turn vegetables, cover and cook another 8 minutes, until all vegetables are tender and slightly charred. You want a good char on the tomatoes and onions.
- Remove vegetables from grill; set aside to cool slightly. Place chicken pieces in a single layer on grill grates; cover and cook 8 minutes. Open grill, turn chicken, and cook for another 4-5 minutes or until cooked through and slightly charred. Remove from grill and keep warm.
- Once vegetables are cool enough to handle, add grilled tomatoes and half of the grilled onions to the vinegar mixture in blender; cover and process until smooth. Adjust seasonings as desired. Set aside.
- Shave the corn kernels from cobbs, separate grilled onion rings and coarsely chop the chicken for the salad.
- Assemble salad by topping chopped lettuce with corn kernels, onion rings, and grilled chicken. Top salads with cherry tomatoes and crumbled cheese; drizzle salads with vinaigrette. Enjoy!
